A lighter take on a usually heavy wing: Good Land Wing Co.

Don't you hate how most of your favorite comfort foods feel good in the moment, but make you feel like you need to be rolled out of the restaurant after? Not anymore.

The founders of Wing It in Port Washington are headed to Milwaukee to revitalize the wing with their new restaurant, Good Land Wing Co. Instead of frying the wings for 12-18 minutes, like most wing places, they will be baked.

Adam Brown and his son, Josh, are partnering with friends Mark Sellers and Brian Conrad to bring a healthy take on Milwaukee's comfort food.

Josh Brown's health-consciousness rubbed off on his father and led Adam to the realization that in order to eat his wings on a weekly basis they needed to be healthier. This is how Good Land Wing Co. was established.

Instead of using the usual frozen wings, they will now be bought raw and cooked fresh. The chicken will be GMO-, steroid- and cage-free. From boneless to the classic wing, Good Land Wing Co. will be the hoppin' new wing fix on the East side of Milwaukee.

Adam Brown stands by his wing motto, "no cheat day needed." With a high heat turbo oven, getting up to 600 degrees, the wings cook hot and crispy without a greasy frying pan. No fryers! Although still breaded, the switch from flash fry to turbo oven does wonders in terms of lowering both fat content and bloat level post-wing.

They also offer a "naked" wing that will be a chicken breast that's dry rubbed, seasoned and baked with no breading. Customers will be able to pair their healthier wings with local craft beers, as well as signature individual wines (or water if you're really trying to kick your health into high gear).

Taking over the old Cold Stone Creamery on Oakland Avenue, Good Land Wing Co. will be within walking distance of UWM. The restaurant decor will be rustic and industrial. The target opening date is Sept. 1.

The owners hope to possibly franchise the turbo oven and continue to cater to the needs of the rising health-conscious generation. As father said to son when first opening Wing It, "you find a need within a market and you fill that need."
