It's been a Milwaukee rib joint and drinking institution for years. Brew City BBQ, as it was first known, helped to create the current Water Street scene and especially after Laurie Jolly, Jim McCabe and chef Kasmier Rutherford revamped it in 2001, it's been a famous barbecue stop.
Now, though, it's going Irish. This isn't, of course, the first change for Brew City. In 2006, Brew City jumped off its long time Water Street location (now inhabited by Bar Louie) to 125 E. Juneau Ave.
Now, this fairly new development has been freshly painted and renamed Trinity Three Irish Pubs. Three distinct pubs (Duffy's, Foy's and Gallagher's), all with different colors and feels, are in the process of replacing Brew City's traditional beer and ribs décor. An employee tells us that only one pub is complete and that all will feature unique items and names. The famous "pig sandwich," that tasty mound of pork with a heap of barbecue sauce, will remain on the menu.
Part of the R.C. Schmidt Restaurant empire -- along with The Historic Turner Restaurant, Water Street Brewery, Oakland Trattoria, Rudy's Mexican Restaurant and Louise's -- Trinity will join its Irish neighbor, The Harp.
Trinity Three Irish has been looking for servers, bartenders and security via a Craigslist ad posted Dec. 12.
